It’s super easy. All you need is boneless chicken thighs, tomatoes, butter, chicken broth, mozzarella cheese, and spices. First, spice the chicken and sear it on both sides till it is nicely caramelized. Then add butter, tomatoes, and chicken broth to the skillet, top the chicken with mozzarella cheese, pop the whole thing in the oven, and boom! Dinner in under half an hour. Yum.

Ingredients
- 3 tbsp extra virgin olive oil, divided
- 2 lbs boneless, skinless chicken thighs
- 1 1/2 tbsp Italian seasoning, divided
- salt and pepper, to taste
- 3 tbsp unsalted butter
- 1/2 cup chicken broth
- 1/2 cup cherry tomatoes, quartered
- 8 oz fresh mozzarella cheese, sliced
- 1/2 tsp red pepper flakes
Instructions
- Preheat oven to 425F.
- Heat 1 tbsp olive oil in ovenproof skillet over medium-high heat.
- Rub chicken thighs with remaining olive oil and season on both sides with 1 tbsp Italian seasoning, salt, and pepper. Transfer to hot skillet.
- Cook chicken for 4-5 minutes per side, until it develops a golden crust. Remove from heat and and butter, chicken broth, and cherry tomatoes. Top each thigh with a slice of fresh mozzarella and sprinkle with crushed red pepper flakes and remaining Italian seasoning.
- Transfer skillet to oven and roast for 8-10 minutes, until chicken is cooked through and cheese is melted.
- Serve topped with pan sauces and fresh rosemary, if desired.
